Black pepper is harvested from the matured green berries of the Piper nigrum vine, mainly grown in Kerala, Karnataka, and Tamil Nadu. After harvesting, the berries are sun-dried until the outer shell turns black and wrinkled. For ground pepper, the dried whole peppercorns are milled under hygienic conditions using cryogenic or cold grinding to preserve essential oils and natural pungency.
